What are chocolate chips?
Chocolate chips are small pieces of chocolate and are an ideal tool for effectively obtaining a perfectly tempered chocolate. Chocolate chips are also ideal for applications in which chocolate has to be added or melted quickly and - or in small quantities.
How do you work with chocolate chips?
The chocolate melting container is filled with the required amount of chocolate and the chocolate chips are completely melted at 40-45 ° C (you will find a number of suitable thermometers in our "Measuring devices from A-Z" section). After the melting process has ended, the temperature of the melting container is reset to the processing temperature (temperature for dark chocolate 31-32 ° C, milk and white chocolate 28-29 ° C). While stirring the melted chocolate with the spatula, add 20% chocolate chips. The result is a perfectly tempered chocolate mass.
